Butterfinger Cookies

This is more of an everyday cookie in my opinion, but it made it onto out Christmas plate… I put them on the list of potential Christmas cookies to try, and Matt wouldn’t let me take them off the list! He’s a big Butterfinger fan – almost as big as all the peanut butter chocolate combo cookies I make!

Matt really likes these cookies. They are a chewy sugar cookie studded with crunchy Butterfinger pieces and a bit of chocolate. Even though not the stereotypical holiday cookie – they are delicious!

Recipe (Adapted from Sally’s Baking Addiction)

I made a double batch and got 6 dozen cookies out of this recipe.

  • 1 cup butter softened
  • 1 1/2 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 ½ cups flour
  • 1 ½ tsp baking soda
  • 1/2 tps salt
  • 16 chopped fun sized Butterfingers

Preheat the oven to 375F degrees and line cookie sheets with parchment paper.

Cream butter and sugar then mix in the eggs and vanilla. Add in the flour, baking soda and salt. It is best to use your clean hands to finish mixing the dough as it is very thick. Then mix in the chopped Butterfingers with your hands.

Scoop out Tablespoonfuls of dough and bake for 8-11 minutes until slightly brown. Wait 2-3 minutes before removing from baking sheet to finish cooling.
