These are super simple – kinda semi-homemade burritos that are a cinch to put together and you can make a bunch at a time. I get 7-12 burritos depending on how large a tortilla I use and how much filling I use per burrito. I have been making this recipe for years so I’m not sure where it came from. We usually make them vegetarian with plain bean filling, but you could mix in a cup of shredded chicken or cooked ground beef if you have a meat lover in your household.
- 1 can (16 oz) refried beans
- 1 cup salsa
- 1 cup cooked rice
- 1 ½ - 2 cups shredded cheese (divided)
- 7-12 flour tortillas (7 burrito to 12 taco sized)
Preheat the oven to 375F. Spray a baking dish with cooking spray. Mix the refried beans, salsa, cooked rice, and 1 cup of cheese to make the filling. Spoon 1/3 – 2/3 cup of the filling into each tortilla and fold in the sides. Place the burritos in the baking dish with the fold side down. Sprinkle the rest of the cheese over the burritos. Bake for 20-25 minutes.
