Pumpkin Kiss Cookies

Happy Thanksgiving Everyone!!

If you are scrounging for a quick seasonal last minute cookie, this is a fun one! My mother in law sent me a bag of those pumpkin kisses and I knew I wanted to try to bake with them. I immediately thought of the peanut butter kiss cookies my mom makes for her holiday cookie plates and decided to pumpkinfy them!

These have a shortbread cookie base with pumpkin pie spice and cinnamon and topped with either a pumpkin kiss or a chocolate kiss (I liked the variety). I think these turned out beautifully and I might play around with the base and some other Hershey’s Kisses to try out other flavors!

Recipe (Adapted From Lovin’ From the Oven)

I got 32 cookies from this recipe.

  • 1 cup softened butter
  • 1 cup powdered sugar
  • 2 tsp vanilla
  • A pinch of salt
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 cups flour
  • 36 Hershey Kisses (I did half pumpkin flavored and half chocolate flavored)

Preheat the oven to 325F. Line the baking sheets with parchment paper. Sift the powdered sugar into a mixing bowl then mix in the softened butter until well creamed together. Add the vanilla, pumpkin pie spice, cinnamon, and salt and continue to cream together until light and fluffy. Mix in the flour and mix until incorporated.

I scooped the cookie dough using my cookie scooper – about 1 rounded Tbsp and roll into a ball. Bake for 12-14 minutes and immediately top with the unwrapped kiss by pressing the kiss down lightly into the center of the cookie. Cool for a couple minutes before transferring to cooling rack to finish cooling.
