Short Cut Supper: Pizza Quesadilla

Traditional quesadillas are a staple in our household for a quick dinner. So I was pretty excited when I came across these on-line as a way to change them up! I took the idea but applied my normal quesadilla making technique.

To be honest, I wasn’t expecting much more than a normal quesadilla, but these were super tasty and super quick! They were so good that Matt and I had decided we would could have eaten two each. It was like a crunchy stuffed tortilla pizza. Hope you try these next time you need a short cut supper!

Recipe

Makes 2 Quesadillas

  • 2 Flour tortillas – burrito style
  • 2 Tbsp vegetable oil
  • 2 Tbsp pizza sauce
  • ½ cup shredded mozzarella
  • 2 oz pepperoni or other preferred fillings

Heat a non-stick skillet or griddle. We have an electric tabletop non-stick griddle we use that I can make both quesadillas at the same time. You could also do this on the stove.

Brush one side of the tortillas lightly with oil and place it oiled side down on the griddle. Brush the other side lightly with oil while that side toasts up. When it starts to lightly brown and bubble up, flip the tortilla and spread the sauce on one side of the tortilla then sprinkle on the cheese and filling. Flip closed the non-filled side of the quesadillas.

Cook on each side for 2-3 minutes until brown and crispy and the cheese has melted.
