As I mentioned in our We’re Back post, Matt and I came up with a recipe we had three times in one week after the first time we tried it. I’m in love with these Guacamole Wraps. Ina Garden has a recipe for guacamole salad in her book Barefoot Contessa at Home which was the inspiration for this wrap. It’s a good Meatless Monday meal!
Makes 2 wraps
- 2 8inch flour tortillas
- 1 avacado
- 2 Tbsp sour cream
- pinch of cumin
- pinch of chili powder
- 1 tomato sliced – you need 4 good slices of tomato
- salt and pepper
- 1 pepper – we used a yellow pepper
- ¼ cup black beans
- shredded cheddar
Start with your tortillas. Mush half the avocado onto each tortilla. Mix the cumin and chili powder into the sour cream and spread over the avocado.
Lay two slices of tomato over the avocado and sour cream. Put a pinch of salt and pepper over the tomato to taste.
Lay your pepper slices over the tomato.
Then put half of the black beans on each wrap.
Add shredded cheddar to your liking. Then wrap it up and enjoy!
