Peanut Butter Fudge

This fudge is AWESOME. And super easy. I wanted to make it as a surprise for Matt and his co-workers as his holiday gift to them, but he made me tell him what I wanted to make ahead of time. This recipe is SUPER smooth, only has four ingredients, and is made in the microwave. I might even be talked into making this one when it is not a holiday!

Recipe (From Annie’s Eats )

  • 1 cup butter
  • 1 cup peanut butter
  • 1 tsp vanilla
  • 16 oz powdered sugar

Line an 8 x 8 pan with tinfoil, this makes it easier to remove the fudge. Put the sliced butter and peanut butter into a microwave safe bowl and cover with plastic wrap. Microwave for two minutes and stir the mixture then cover again and microwave for another two minutes. Mix in the vanilla, then mix in the powdered sugar. The mixture may become somewhat stiff. Then transfer to the baking pan. Cover with parchment paper and harden in the fridge for at least 2 hours. Cut into 1 x 1 inch pieces and can be stored at room temperature for up to one week.
