Flourless Peanut Butter Chocolate Chip Cookies

This has quickly become my go-to peanut butter cookie recipe. It only has a few ingredients, comes together super quick, and I can bake them all on one baking sheet. They are flourless and I have made these before for some friends who cannot have gluten, but I make them for myself as well. They are a pretty rich cookie so I keep them pretty small, and you can REALLY taste the peanut butter. I add mini chocolate chips to them, this is an optional ingredient, but if you are going to add chocolate I would recommend the mini chips so they distribute well in the small cookies.

Another note on these cookies, when I plan in advance to make these I go out of my way to get natural peanut butter without extra sugar so I can better control how much sugar I add. When I make these on a whim I usually have Skippy on hand and I cut back on the sugar by a couple tablespoons.

Recipe Adapted from Claire Robinson on Five Ingredient Fix

Makes 18-20 small cookies

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ cup mini chocolate chips
  • A pinch of salt

Preheat the oven to 350F. Mix all ingredients together. Cover a baking sheet with parchment paper and drop tablespoons of dough onto the baking sheet. Use a fork to a make criss-cross pattern on top of the cookie. Bake for 8-10 minutes until slightly golden on the edges.
