Butterfinger Rice Crispy Treats

OMG, I cannot believe I have never made rice crispy treats until I tried to make these. I was completely missing out, they are so easy. This was also a good rice crispy treat; they are gooey, salty, and crunchy. I initially decided to make these for Matt as butterfingers are his favorite candy bar and there was a peanut butter topping, I thought he needed a treat to take in on his soup day at work. But now that I know how easy AND tasty these guys are, I will have to make more. The site I found the recipe on had a dozen other fancy rice crispy recipes I may have to work my way through…

Recipe (From Cookies and Cups )

  • ¼ cup butter (unsalted)
  • ½ tsp salt
  • 10 oz mini marshmallows
  • 4 cups rice crispies
  • 8 butterfinger bars chopped
  • ½ cup chocolate chips
  • 2 Tbsp peanut butter

Prepare an 8x8 or 9x9 pan with cooking spray. Melt the butter over medium heat. While melting add the salt (it helps with the sweet/salty balance). Once melted add the marshmallows and stir until melted (Matt helped with this part, he thought it was fun). Once melted add the rice crispies then the butterfinger bars. Once all incorporated pour into the prepared pan and flatten into the pan. Melt the chocolate chips in the microwave then add in the peanut butter and stir until incorporated then spread over bars. I kept the bars in the fridge for about 30 min to help the chocolate to harden before cutting them.
