Pumpkin Spiced Granola

Granola bars are a go-to snack for me, especially when I am on the run. I’ve tried the Kashi pumpkin granola bars, and they are ok, but I’m not a huge fan of the texture they have. This recipe piqued my interest, since it is a granola it doesn’t have the texture issue the granola bars have, and I still get to use pumpkin pie spice. This is a really neat granola recipe as maple syrup and pumpkin go together so well (pumpkin pancakes anyone??) I tried to keep it fall inspired and used walnuts and cranberries for my mix ins. Matt keeps sneaking it on me… I might have to hide it from him next time.

Recipe Adapted from Annie’s Eats

  • 3 cups rolled oats
  • 3 cups puffed rice cereal
  • 2 tsp pumpkin pie spice
  • ¼ tsp salt
  • ¾ cup brown sugar
  • ½ cup pumpkin puree
  • ¼ cup apple sauce (I used an unsweetened one)
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 1 cup chopped walnuts
  • 1 cup dried cranberries

Preheat the oven to 350F. Mix the rolled oats and the cereal together in a large bowl. Mix all other ingredients EXCEPT the nuts and dried fruit in another mixing bowl. Pour the pumpkin mix over the cereal mix and cover the cereal. Spray a baking sheet with cooking spray and spread the granola mixture on the baking sheet. Bake for 30 minute, I mixed it midway with a large spoon. Add the nuts after it has been baking for 30 minute and mix in and continue to bake another 15-25 minutes mixing the mixture every 10-15 minutes. I needed the whole time. Cool the granola, add in the dried fruit, and keep in an airtight container.
