Egg and Cheese Quesadilla

I often promise Matt nice breakfasts in the morning on the weekends, usually something like banana pancakes or French toast, and then I get up and am not so into it that early in the morning. Those who know me well know I’m more of a night owl than an early bird. So we normally walk over to the grocery store to pick something fun up or have cereal. Last weekend I think I surprised him and actually put together a nice Sunday breakfast without any reminders!

Matt and I used to make this egg pizza that was super tasty. It was built on top of a Boboli crust with eggs, bacon, and cheese. I had a bit of a hankering for it but wanted to lighten it up, so I replaced some of the eggs with egg whites and used a tortilla that we had left over instead of a thick pizza crust. I didn’t add any milk to the eggs like I normally do for scrambled eggs since I wanted a nice dense egg for this. I also added basil because I love basil in eggs. Below is the resulting ooey gooey cheesy eggs!

Recipe

We split this

  • 2 eggs
  • 2 egg whites
  • 1 10 inch flour tortilla
  • salt and pepper
  • a little dried basil
  • cheese to your liking
  • cooking spray

Preheat the oven to 375F. Mix the eggs and egg whites with salt, pepper, and basil until incorporated. Put in non-stick pan over Medium heat and stir often until eggs are mostly cooked but not totally set. Put the tortilla on a baking sheet. Then put eggs on ½ of the tortilla and top with the cheese. Fold the tortilla over and spray the top with the cooking spray (this step is optional but I wanted it to brown up a bit). Place in the oven for 7-10 min until the eggs are set and the tortilla browning it to your liking.
